Coral mussels come from sea cucumbers that grow in northern Canada, near the Arctic, and the water quality has not been polluted. 

Coral clams are the internal organs of Canadian red sea cucumbers. They are named for their orange-red appearance and their coral-like color. 

In addition to being used as a hot pot ingredient, the most common is to fry coral clams with XO sauce, which is crispy and elastic.
