This Hamachi boasts abundant fat and tender, juicy flesh. The fish belly bones are especially full and flavorful. The movement of the fins keeps the surrounding muscles firm and elastic. After salt-grilling or simmering in sauce, it releases enticing oils and gelatin, making every bite truly unforgettable.

Simple and Delicious Cooking Method:  

Rinse the fish thoroughly and pat dry. Evenly coat with Japanese white miso, mirin, and cooking sake, then marinate for about 15 minutes to enhance flavor.
Preheat your oven to 200°C. Place the fish skin side down on a baking rack. Roast each side for 10 minutes until golden and crispy.
